Who doesn’t love a picnic in the park? Is there a more glorious way to welcome Spring than the feel of newly verdant grass under bare feet, the warming sun turning your cheeks a healthy pink and the anticipation of sitting down over lunch to view the miracle of nature’s yearly renaissance? I think a picnic is also a great way to kick start that summer feeling.<\/p>\n

You can plan your picnic virtually anywhere you have space to spread out a blanket. We’ve even had ours in the back garden. I recall throughout my childhood, every Victoria Day weekend our parents would pack a delicious picnic basket and head to our neighborhood park to enjoy the entertainment organized to celebrate Victoria Day. We would run in the sunshine, play a wild game of hide-and-seek, toss a ball and build our appetites anticipating the picnic to come.<\/p>\n

A picnic should be fuss-free, but never dull. A fresh salad, sandwiches, chicken wings, leftover barbecue ribs, cold drinks and a sweet surprise at the end of the meal make for a memorable al fresco feast. Of course, a picnic wouldn’t be a picnic without mom’s delicious potato salad. However, it’s not the food people remember, but the shared story of “that day” and the time they spent together creating those moments.<\/p>\n

This Victoria Day we’re heading up to Whistler. To break up the journey, we’ll stop at Brandywine Falls and set up our Victoria Day Basket that’s laden with prosciutto melon skewers for a delicious and perfect starter. Potato salad, green salad and two different type of sandwiches as our main course are precisely what every picnic needs. As a finale, I’ve chosen a key lime pie in a jar rather than by the slice, making transportation and clean up that much easier and personalizes the dessert.<\/p>\n

If you’re pressed for time and just can’t pull it together, have no fear! Vancouver has three companies that will do that for you. All you have to do is reserve a basket and pick your destination.<\/p>\n
